Weekend Cooking 9/12-9/13 September 15, 2009

Bought a whole bunch of veggies for the week and spent a good portion of  Saturday prepping them. I also made the following:

Tomatillo Salsa: again.  Still very good.

Blue Cheese dressing: leftover blue cheese, buttermilk, garlic, salt/pepper, a little oil. In the food processor and noms.

Asian dressing: honey, limes, soy sauce, 5 spice powder, sesame oil.  good.

Crab cakes: soy, panko, 2 cans of trader joes crab, 5 spice powder, eggs. Turned out really good. Dense but flaky.

Fried tomatoes:  salt and pepper sliced tomatoes, dip into flour to remove moisture, dip in beaten egg, dip in panko. Pan fry till golden. Cover with parmesan cheese as soon as you pull them out.

Cornmeal Buttermilk Pancakes: turned out good. I added vanilla. Used this recipe:

BBQ Chicken Quesadilla : shredded store-bought rotisserie chicken mixed with bbq sauce and a little siracha, grilled onions and cheddar cheese. Very yummy. Served with the tomatillo salsa.

Will try to remember to take pictures next time or be more accurate with recipes.

Labor Day Cooking September 9, 2009

Made the following this weekend

Strawberry cake: I used the Sprinkles strawberry cupcake recipe and added a little bit more strawberry than it called for.  I made them in a mini loaf pan.  Then glazed them with a strawberry puree, powdered sugar, vanilla mix.  Turned out well. Next time I will let the glaze get a little firm on the cake before packaging

Blue Cheese Rolls:  1 puff pastry sheet or 1 pkg crecent rolls all the seams smooshed together. Mix blue cheese, walnuts, pears, honey together and put in to one of the edges (longways) of the roll. Roll chill/freeze for 10 min, slice bake at 375 for about 10 min or so.  Very good. Will add to party menus.

Tomatillo Salsa:  roasted 2 large tomatillos and 2 serranos in the oven. Put those in a food processor with some garlic and sauteed onion.  Pulsed and then added salt, cilantro, and two avocados. Spicy but very good. Adapted the recipe from Rick Bayless

Distance September 9, 2009

For the last couple of days I have been kind of emotional. It started Friday night and I think it might have been brought upon by Julie and Julia but I am not sure. It may also have been brought upon by my shitty super busy weeks at work.  And crashing from the high and the level of calmness I have been maintaining to keep everyone at work happy. Or a kind of Mortal Kombat-finish her super combo kick.  So that is how I started my labor day weekend.

I got up Saturday morning feeling super sad and knowing that I had a long day of socializing ahead of me and no chance to crawl back into bed. I used the cooking energy from Julie and Julia to bake Strawberry Cake and these Crescent Roll blue cheese things. (Talk more about those on another post).  The cooking didn’t help, sigh.  Hung out with family in Rancho Cuca  for the afternoon which was hard to make conversation.

Evening was filled with Dahonay campsite goodness. Which I enjoyed and did bring up my spirits. Sunday was an okay day too hanging with my parents and then to Dahonay campsite again. Tried to stay up all  night but failed.

Monday was hard. I was tired and wanted to crawl into bed again but resisted and made breakfast, recorded Uncast, and finished my book.

Then work on Tuesday. So hard to function today but I got through it. Towards the end of the day I felt better, listening to Victor Varnardo on the 100 for 30 at www.katg.com totally got my mood kicking up. And my lovely hubbie helped the other part of my mood kick into high gear again.

So I am coming out of this with , so yay!

One thing I realized with this is that it is kind of cyclical for me and that when it happens I distance myself from everyone except hubbie.  So I will try to be better and reach out when I really need it. Loves

Reading:
Specials , Scott Westerfield : Part of his Uglies trilogy. Good. I liked Uglies and Pretties better. I found myself getting more annoyed with the main character in this book.  However I highly recommend this entire series. Very well written teen sci-fi. One would typically assume that teen fiction is poorly written but can have some awesome stories involved. This is one

Extras,  Scott Westerfield:  Just started it but good. The 4th book in his trilogy. (I know)
